Butterfinger and Chocolate Chip Cake Batter Cookies

One of my favorite things to do on the weekend is to bake with my kids. I can’t take credit for this recipe, but I wanted to share it for a few reasons.
1 – It is super easy to make.
2 – It doesn’t take a lot of ingredients.
3 – It doesn’t take long to mix or to bake.
4 – It is a great recipe for the kids to be involved in.
5 – The cookies are so good!

My kids call these Martha cookies because that is the name of the person who originally made the cookies for them, and she passed the recipe on to me. Back in high school, a classmate used to make a similar cookie and bring to us. I don’t know if it is the same recipe, but it was always such a treat when she made them!
You only need a few ingredients.
- 1 box of butter flavored cake mix
- 1/2 cup of oil
- 2 eggs
- 1 small bag of chocolate chips (I use milk chocolate) or a bag of crushed Butterfinger candy (you can crush your own, I just like the convenience of having it done for me :-))

I also love that this is a one bowl recipe. Less clean always makes me happy! You just need a big bowl and spoon to mix.
So, here are the steps:
- Preheat oven to 350
- Spray a cookie sheet with baking spray
- In the bowl, add the cake mix, oil, and eggs.
- Mix until combined well.
- Add in the chocolate chips or Butterfinger pieces and stir that together.
- I usually use a tablespoon to spoon out the batter onto the cookie sheet.
- Bake for 8 minutes or so. They will not look quite done, but take them out and let them cool. Your oven temperature may vary, but it usually takes 8 1/2 minutes in my oven.
There will be enough batter for a couple of cookie sheets. You can go ahead and do 2 cookie sheets at once. I usually let one batch cook, let it cool slightly, transfer to a cooling rack, and then use the same cookie sheet to bake the next one. Like I said, I am a fan of less things to clean up.
